Orange Mousse

Muringakka Maanga Curry | Drumstick Mango Curry



Ingredients:

Drumstick-3
Mango -1 small
Grated coconut-3/4 cup
Greenchilly-2
Cumin seeds-1/4 tsp
Turmeric-powder-1/2 tsp
Shallots-6 (3 for grinding and 3 sliced)
Curry leaves-as required
Mustard seeds-1/2 tsp
Dry red chillies-2
Salt -to taste

Method:

1.Peel the outer skin of drumstick and cut into  2 inch pieces.
2.Peel off the skin and cut the mango cut into 2 inch pieces.
3.Cook the drumsticks and mangoes with salt and enough water.
4.Grind grated coconut,small onions,green chillies,cumin seeds and turmeric powder into a fine paste adding little water.
5.Add this fine paste to the cooked drumstick and mango.
6.Cover and cook again for two  minutes on low flame.
7.In a separate pan,add oil and splutter mustard seeds.Add the sliced small onions,curry leaves and dried red chilly and fry .
8.Pour this over curry and mix.


Notes:


  • The quantity of mango depends on the sourness.If the mango is too sour reduce the quantity.
  • The curry tends to thicken with time.Hence add water as required for correct consistency.
