Caramel pudding is a delicious and elegant pudding.Here is the recipe of no-bake caramel pudding which doesn't use any kind of setting agents.
Ingredients:
Milk-500ml
Eggs-3
Sugar-1/4 cup(for caramelising) + 3/4 cup (pudding)
Vanilla essence-1/2 tsp

Method:
1.Preparation of caramel syrup
a.Heat a nonstick pan.When the pan is hot,spread 1/4 cup of sugar in the pan .Do not stir until the sugar completely dissolves.
b.Switch off the flame when the syrup turns golden brown in color.
c.Immediately transfer and spread it in the pudding dish.Allow it to cool and set in the pudding dish.
2.Preparation of pudding mix
a.Boil the milk adding sugar.Allow it to cool slightly.
b.In a bowl lightly beat the eggs.Pour the milk into it stirring continuously . Mix well.
c.Add the vanilla essence and mix.Strain the milk-egg mix.
d.Transfer the mix into a sauce pan and put it on a water bath. Stir continuously until the mix thickens slightly.
e.Pour it into the pudding dish and cover it with aluminium foil.Cook it in a steamer for 20-30 minutes in low flame.
f.When it cools,keep in refrigerator for 3-4 hrs .

Notes
- Never pour beaten egg to the milk,as it may get cooked with heat of milk.Do the reverse(Pour milk to the egg stirring continuously.)
- To prepare water bath: Heat a wide pan half filled with water .Once the water starts boiling, reduce the heat and place the saucepan over it.Make sure that the bottom of sauce pan doesn't touch the bottom of pan with water.
