Orange Mousse

Egg Korma | Egg Kurma



Ingredients:

Egg-5
Big onion-1 medium sliced
Tomato -1 small cubed
Ginger-1 small piece chopped
Garlic-3 chopped
Greenchilly-5
Mint leaves-4
Coriander leaves/Curry leaves- as required
Coriander powder-1.5 tsp
Kashmiri chilly powder-1/2 tsp
Turmeric powder-1/4 tsp
Garam masala-1/4 tsp(optional)
Cumin seeds-1/2 tsp
Fennel seeds-1/4 tsp
Cardamom-2
Cloves-2
Cinnamon stick -1 small
Bay leaves-1 small
Coconut grated-4 tbsp
Cashewnut-8 nos
Oil-as required

Method:

1.Soak cashewnut in water for 10 min.Grind the soaked cashewnut with the coconut and fennel seeds into a fine paste.
2.Crush together the cumin seeds ,cardamom,cloves,cinnamon stick and bay leaves .
3.Heat oil in a pan and add the crushed masalas. To it add the sliced onions,ginger,garlic,green chillies ,mint leaves and tomato  one by one and saute.Add enough salt. When  the onion and tomato are half done,switch off the flame and allow it to cool.Grind the cooled mix to a fine paste.
4.Add little more oil to the same pan and when its hot,add the   kashmiri chilly powder,coriander powder,turmeric powder and garam masala.Cook it  for a minute or two.
5.Now add the ground onion -tomato paste .Pour  1.5  cup water to it .When it starts boiling add the cahewnut-coconut paste and mix well.
6. Add coriander leaves/curry leaves and give a stir.
7. Add the boiled egg and cook it closed in low flame for 3 mins. Remove from the fire and serve hot with appam,parotta, pathiri,chappathi etc .
