Orange Mousse

Padavalanga mutta thoran | Snakegourd egg thoran





Ingredients:

Snakegourd | Padavalanga - 1 small( cut into small square pieces)
Egg-1
Grated coconut - 1/2 cup
Greenchillies - 2(medium spicy)
Shallots- 4
Curry leaves -as required
Turmeric powder- 1/2 tsp

Method:

1.Clean and cut the snakegourd into small square pieces.If the snakegourd is too watery ,squeeze off the water.
2.Cook the snakegourd with salt and 1/4 cup water in a claypot. If the snakegourd is already watery do not add extra water
3.Grind coconut,turmeric powder,shallots,greenchillies and one curry leaf with little water.
4.Heat a pan and add 1tbsp oil to it.Splutter mustard seeds.
5. Add the ground mix into it and cook for a minute or two.
6.Pour an egg into it and scramble .Add salt to taste.
7.Once it is cooked switch off the flame.
8.Add this coconut egg mix to cooked snakegourd and mix well.Cover and cook for 1 more min.Switch off the flame.
The curry is ready to serve.
