Orange Mousse

Prawns Masala | Chemmeen masala | ചെമ്മീൻ മസാല



Ingredients:

Prawns-1/2kg
Pearl onions(cheriya ulli) sliced - 1 cup
Ginger crushed - 1tbsp
Garlic crushed - 1 tbsp
Green chillies -2
Curry leaves - as required
Coconut slices - as required
Medium spicy chilly powder -1/2 tsp
Kashmiri chilly powder - 1 tsp
Coriander powder -1tsp
Turmeric powder -1/4 tsp
Garam masala -1/2 tsp
Cambogia(Kudam puli) - 1 small piece
Salt - as required
Coconut oil - as required
Mustard seeds -1/2 tsp

Method:

1. Wash and clean the prawns.
2.In an earthen pot(manchatti), mix kashmiri chilly powder,medium spicy chilly powder,coriander powder, turmeric powder,ginger,garlic,coconut slices,cambogia(kudampuli),salt and curry leaves with one cup of water.
2.Allow them to boil.
3.Add the cleaned prawns into it.
4.Cover and cook until the water is fully absorbed and the masalas are coated well on the         prawns.Make sure that prawns are not overcooked.
5.Switch off the heat.
6.Heat coconut oil in another earthen pot or any pan and splutter mustard seeds.
7.Saute the pearl onions , greenchillies and curry leaves  .Check salt to taste.
8.When the pearl onions are sauted well,add the cooked prawns.
9.Add little water and garam masala to it and mix well.
10.Fry for 3 min.Switch off the flame.Tasty Prawns masala is ready.

Notes:
You can add more oil and fry for some more time to make it dry masala.
