Ingredients:
Bittergourd- 1 cup ( cut into small square pieces)Carrot -1/2 cup( cut into small square pieces)
Grated coconut-1 cup
Big onion-1/4 cup (thinly sliced)
Green chilly-1 (chopped)
Curry leaves -as required
Mustard seeds-1/2 tsp
Salt-to taste

Method :
1.Clean and chop the bittergourd and carrot into small square pieces.
2.Heat a pan and splutter mustard seeds.
3.Add the bittergourd and carrot into the pan and saute for a minute.
4.Add the thinly sliced onion,green chilly and curry leaves to the bittergourd-carrot and saute again.
5.Cover and cook the bittergourd-carrot mix.Add little water if necessary.
6.When it is half done,add the grated coconut.
7.Add 2 tbsp water to it.Cover and cook again for a minute.
8.Mix the curry well.
Our bittergourd-carrot mix is ready to serve.
Note:
- The addition of carrot reduces the bitterness of bittergourd.
- Do not cook the thoran for long after adding the grated coconut.
