Orange Mousse

Paneer Masala




Ingredients:
Paneer cubes-200g
Turmeric powder-1/4 tsp+ 1/4 tsp
Kashmiri chilly  powder -1/2 tsp
Medium spicy chilly powder-1 1/2 tsp
Coriander powder-2 tsp
Garam masala-1/2 tsp
Big onion-1 sliced
Ginger-1 small piece chopped
Garlic-4 chopped
Grated coconut-1 tbsp
Tomato - 1 medium cubed
sugar-a pinch
Coriander leaves -as required (chopped)
Vegetable oil-as required
Salt -as required

Method:
1.Marinate paneer pieces with 1/4 tsp turmeric powder,1/2 tsp kashmiri chilly powder and salt for 10 minutes.Shallow fry the paneer pieces until light brown in colour.
2.Grind the grated coconut to a fine paste adding little water.
3.In a pan,add oil and saute onion,ginger and garlic with enough salt.When the onion starts changing color , simmer and add the chilly powder,coriander  powder and turmeric powder . Fry for a minute or two.Add the tomato pieces and saute for another 2-3 minutes.Switch off the flame.When it cools completely,grind it into a smooth paste.
4.To a pan ,add the ground onion paste and 1 cup water.Mix well and heat.Add the ground coconut paste and allow it to boil for 5 minutes in low flame.Then add the paneer pieces and garam masala.Cover and cook in low flame for another 3 minutes.
5.Finally add the coriander leaves and  a pinch of sugar and mix.Switch off the flame.

Notes:

  • I have used frozen paneer here.You can use fresh paneer also.
  • The gravy seems to thicken on cooling.You may add little hot water ,if you feel that the gravy is too thick.
