Orange Mousse

Vegetable Pulao

Ingredients:
For rice:
Basmati rice-1.5 cups
Cardamom-2
Cloves-2
Cinnamon sticks-3 small
Bay leaf-1
Salt
Lemon juice-1 tsp

For vegetables:
Beans chopped-3/4 cup
Carrot-1 1/4 cup
Big onion - 1 chopped
Ginger-garlic paste-3/4 tsp
Cumin powder-2 pinch
Cardamom-2
Cloves-2
Cinnamon sticks-2  small
Pepper-20
Coriander leaves - chopped
Mint leaves -8 chopped
Ghee-1 tbsp

Method:
1.Soak basmati rice for 20 minutes.After that drain out the water completely.
2.Boil water in a pot and cook the rice with cloves ,cardamom,cinnamon sticks ,bay leaf,lemon juice and salt.Once rice is cooked 90%, strain the excess water ,spread  on a plate and fluff it up with a fork and let it cool down.
3.Cook the vegetables in a steamer for 10 minutes.Set aside.
4. Crush the  spices(cardamom,cloves,cinnamon sticks,pepper) for vegetables to a semi coarse powder.
5.Heat ghee in a pan,add the crushed spices and cumin powder to it and fry for a minute.
6.Add the chopped onion ,ginger-garlic paste and saute.
7.Add the cooked vegetables to it,give a quick mix.
8.Add the cooked rice,coriander leaves and mint leaves little by little and mix well.
9.Cover and cook in low flame for 2 minutes.
10.Garnish with fried cashews and raisins.

Notes:

You can add vegetables of your choice.You may add peas,corn etc.
