Orange Mousse

Passion Fruit Squash





Ingredients:
Passion fruit pulp-1 cup
Sugar-2 cups
Ginger 1/2 inch piece
Lemon juice-1/2 lemon

Method:
1.In a mixer jar ,add 1/4 cup of water to 1 cup passion fruit pulp and press the pulse button 2-3 times to separate the seeds.Pour it through a strainer and set aside the juice.( I got 1 cup of juice)
2.In a pan,heat 2 cups (double the quantity of juice) of sugar with 1/2 cup water and crushed ginger until the sugar is dissolved.When the sugar syrup starts boiling switch off the heat.Immediately ,add the passion fruit juice and mix well.Allow this mix to cool.
3.Add the lemon juice to the cooled mix and strain again to remove the ginger pieces and any impurities.The passion fruit squash is ready to serve.
4.Add 3/4 glass of water to 1/4 glass of squash.Mix well and serve.

Notes:

  • If the passion fruit juice  is too sweet ,you may reduce the sugar to 1.5 cup  .
  • I got 1 cup of pulp from 6 passion fruits.
  • Sugar acts as the preservative here.You can store this squash in refrigerator for 6 months.Mix it with water just before serving.
  • You can make 10-12 glasses of squash with the above mentioned quantity.
